In biblical times, salt was a valuable commodity used for food preservation and currency, so spilling it was considered almost sacrilegious. The superstition is thought to have originated as a way to "keep the devil at bay". The salt is meant to either blind the devil so he can't see your mistake, or to keep him from sneaking up on you while you clean up.
